Left over ham (from that Sunday ham you cooked) cut into chunks
3 or 4 hard boiled eggs
Homemade mayonnaise (amount will depend on how much ham you have)
Homemade dill pickle relish (again, amount will depend on how much ham you have)
Put ham chunks into your food processor and chop about a minute.
Add the eggs (whole) and pulse a couple or three times. Add enough mayonnaise to make of a spreadable consistency. Add pickle relish to taste.
When you add the eggs, you could also add some coarsely chopped onion.
This is good served as sandwiches or on a couple of leaves of lettuce picked fresh from your garden!
