This is a recipe I got from one of those school cookbooks a very long time ago. I changed some things to our taste (my boys and I and now my guy and I). I also like to add some spices and a touch of flavoring (almond for the cherry cobbler, vanilla and some all spice and a touch of cinnamon for the apple, and a touch of ginger for the peach). Use a very light hand with the spices and flavorings as they should enhance the flavor of the fruits, not cover them. Mix them in with the batter before pouring into the casserole
1-1/2 cups self rising flour
1-1/2 cups sugar
about 1-1/2 cups whole milk
1-1/2 sticks butter
About 2 cups canned peaches, apples, or pitted cherries in lite syrup**
Pre-heat oven to bout 375F to 425F. Place butter in a 2 to 2-1/2 qt casserole and place in oven until butter is melted but not browned.
Mix flour, sugar and milk. Pour into casserole on top of melted butter. DO NOT MIX but gently spread even if necessary. Pour fruit, juice and all on top of this. Again, do not mix but gently spread out evenly in casserole. Place in oven and bake until crust forms and browns to a nice golden color. Usually about 30 minutes or so.
**You can use fresh fruit in place of the canned, but make sure you you peal, slice (or pit if using cherries) apples and peaches. Add just enough sugar to coat everything good and set aside to "juice". With blue berries, huckle berries, and black berries, just add sugar to the fruit and set aside. Stir occasionally to keep any sugar from settling in bottom of bowl.
